My Own Creamy Carbonara Recipe

My toddler and my husband both love eating and so do I. Who doesn’t like eating anyway? Some may avoid eating because of diet restrictions, but if given the chance to freely choose the food they like, for sure they’ll end up indulging those sinfully delicious meals.

After a tiring work schedules last week, I promised to cook something to treat me and the whole gang. I decided to prepare Carbonara, a popular pasta dish with white cream sauce. My previous work mate used to bring this dish at work and when I first saw it, I thought it was kind of weird for a pasta with white sauce. My Mama only cooks Spaghetti with tomato sauce. I gave it a chance and tasted a few servings and ended up asking for more. It’s delicious and I love the creaminess of the milky sauce and the salty kick of the meat.

Because of my addiction to Carbonara (lol), I asked help from my colleagues and browsed through Google on how to create a homemade Carbonara. Buying from the restaurant is quite pricey and their servings won’t satisfy my Carbonara cravings.

Let’s start cooking.

Ingredients:

  • 500 grams Fettuccine Noodles( ideal one) but for me I chose a spaghetti pasta instead
  • 1 can evaporated milk
  • 250 ml All purpose cream
  • 250 grams of mushroom
  • 200 grams sweet ham. You can also add bacon if you want.
  • 1 head garlic
  • 1 minced onions
  • 2 tablespoon olive oil
  • 250 grams Cheese, grated

I’ve discovered from our local supermarket about a ready-made sauce for Carbonara. I did try it once but I still love the taste of my homemade sauce using these ingredients.

Cooking Steps.

Cook the Spaghetti pasta  in a large pot with boiling water. Just follow the instructions on the packaging in cooking the pasta. Taste the pasta if it’s already cook before draining it and set aside to let it cool down.

Fry the ham and drain it. Cut it into small little squares in uniform sizes to add beauty during the presentation part of the dish. Set Aside.

Let’s make the sauce. In a pan heat the olive oil and sauté garlic the onion and the mushroom. Add ¾ of the fried ham. The remaining ham will be used to top the pasta together with the grated cheese to make it appear more enticing to eat. Stir for 5 minutes or until the mushroom is tender.

Add the evaporated milk. Then gradually add the All purpose cream and grated cheese. Stir and let it boil.

Depending on your taste buds, you may adjust the creaminess and the saltiness of your sauce by adding water or evaporated milk on it.

Remove the sauce from heat once the sauce thickens.

Prepare your pasta and the remaining ham with grated cheese to top it.

And the gang is ready to attack my Creamy Carbonara cooked with love.
